As a laboratory of ideas and tastes, our Ancient Gastronomy Department is one of the pillars of Saveurs d’Histoire (know-how) : our aim is to keep alive a catalogue of “Gourmet destinations” through the most representative periods of French gastronomy.

Our carte offers an authentic cuisine based on fresh regional products and on the diversity of our terroirs.

A gallery of the great chefs who have helped to forge French and European gastronomy over the centuries. A gourmet epic spanning more than 600 years, which honours these chefs, “stars” of history, who have left us an exceptional heritage through their work and talents.

The Ancient Cuisine department of Saveurs d’Histoire has collected a great deal of information on the table and cuisine of the great periods of history. The composition of the menus is largely based on the study of old cookery books and recipes of a period.
